Spoon {eats} : Banana, cardamon + ginger porridge

Early weekday starts during the bleak winter months require warming bowls of porridge to keep our energy levels up. When the alarm goes off and hibernating under your duvet feels like the more attractive option, we think about what’s in store for breakfast to motivate our mornings.

Oats and banana are the ultimate energy providers for hectic weekdays. We like adding chopped banana to our porridge mix before heating on the hob for a naturally sweet flavour. Ground cardamom adds another mellowing sweetness, which when contrasted with a subtle kick of ginger, keeps our taste buds guessing.

Ingredients (serves 2):

  • 100g jumbo oats
  • 2 x chopped bananas
  • 6 x cardamom pods (de-seeded and ground)
  • 1 tsp ginger
  • 250ml water
  • 250ml oat milk (any milk will do)

 

Toppings:

  • Granola
  • Freshly chopped apple
  • Mixed seeds – pumpkin, sunflower, sesame
  • Mixed nuts - Pine nuts, flaked almonds, walnuts
  • Goji berries

 

Method:

Add all your ingredients to a saucepan and cook over a medium heat for 5-10 minutes until your porridge forms your favourite consistency.

Add a little more milk or water if you prefer a runnier porridge.

Spoon into bowls and serve with suggested toppings.
