Vegan / Veggie Breakfast Burger

Our veggie burger with vegan ingredient alternatives is perfect for all breakfast lovers out there who would quite happily eat it for breakfast, lunch and dinner. This guy really hits the spot. 


  • 4 tbsp oil
  • 1 red onion, sliced thinly
  • 1 chia/flaxseed egg or 2 medium eggs
  • 2 cloves of garlic, minced
  • 150g veggie mince
  • 50g oat flour
  • 400g cannelloni beans 
  • 1 tbsp tomato paste
  • 1 tbsp smoked paprika 
  • Salt and pepper to taste
  • 200g Panko breadcrumbs


Heat 1 tbsp of oil into a skillet over medium heat. Once hot; fry the onion and garlic and sauté until the onion is softened. Add the veggie mine and fry until cooked.

Once the mixture is cooked, add it into a food processor with all of the other ingredients (apart from the Panko breadcrumbs) Pulse a few times until a mouldable dough forms, taste and adjust seasonings as needed.

Form the mixture into 4 burger patties, set aside.

Place the panko breadcrumbs into a shallow dish and submerge the burgers into the mixture, make sure to fully coat the burgers.

Heat a skillet and add the rest of the oil. Add the burgers and cook for about 5 minutes until golden and crisp. Make sure to cook both sides.

Assemble the burgers by adding your favourite breakfast ingredients such as sliced avocados, vegan bacon, ketchup, onions and spinach sandwiched into a bun. The choice is yours.
